Well we had dinner at daughters Wendsday because she was on call thursday and ended up getting a trip to Lima.
So we are doing our usual thanksgiving this weekend. The better half is sick and I am now feeling it myself.... But I have the briskit... We picked it up wendsday at wally world. They didn't have many left that close to thanksgiving so I ended up with a small one. Not known for the best meat but we were only going to one place that day.
Here it is all seasoned up ready to hit the fridge. I make mine spicy and I like a thick spicy crust as we pick off pieces while it's cooking. Super seasoned little chunks that taste really good. Almost no BBQ joints do a bark like that and few use enough smoke as people are used to bland food.
I usually start cooking in the evening but since I know I'm getting sick I would rather start it in the morning and then stay up late tomorrow night if needed. I really don't want to pull the usual all nighter when I am getting sick as it's bad enough when feeling good. Worst case I will put it in the oven tomorrow night and finish it in there. It's not a very big briskit so it might be done by midnight if I start early enough in the morning. I will update the pics as it cooks tomorrow.
